I have to confess that LauraLee's post on chocolate where she 'eeewed' on coconut inspired me, in fact took me way back to a time of life that seems magic to me now...life on an island...going to the beach...a hot and scorching day...a cool sea breeze...coconut vendors...coconut water...coconut jelly...family...friends...

I read this post with a huge smile on my face early this morning, especially while listening to Harry Belafonte. He was one of my mom's, and my husband's favorite singers! Another singer like him was Trini Lopez, singing Lemon Tree... Is Harry from Trinidad? I was so engrossed with thinking of what coconut topic to post on my blog, I forgot to leave a comment. Wonderful reminder of the simplicity, freedom and fun of island life.
I love coconut but have never had it fresh!! oh, I wish I had done this on my first and only (so far) trip to 'the islands'!!
So here I was picturing Harry B in a suit and tie....but I'm guessing he might have waist long dreds!! loved it!
